摘要 为寻求鳡鱼资源利用新途径,以鳡鱼内脏为原料,采用钾法和酶解法提取鳡鱼内脏油,并对所得油进行理化性质及DHA分析比较,确定鳡鱼内脏油较好的提取方法。钾法提取鳡鱼内脏油的最佳工艺条件为:液固比1.5∶1、pH 7.5、水解温度70℃、水解时间50 min、硝酸钾用量4%、盐析时间15 min,在此条件下鳡鱼内脏油提取率为87.92%;酶解法提取鳡鱼内脏油的最佳工艺条件为:液固比1.5∶1、pH 7、酶解温度45℃、酶添加量2.5%、酶解时间2.5 h,在此条件下鳡鱼内脏油提取率为92.13%。钾法和酶解法所提鳡鱼内脏油中DHA含量分别为24.07、36.38 mg/g,酶解法所提鳡鱼内脏油各项理化指标及DHA含量均优于钾法。研究表明酶解法是鳡鱼内脏油提取的较好方法。 Abstract: In order to seek new ways to the resource utilization of yellow cheek carp, the oil was extracted from the viscera of yellow cheek carp by potassium hydroxide hydrolysis method and enzymatic hydrolysis method, and the physicochemical properties and DHA contents of yellow cheek carp viscera oils were ana- lyzed and compared to determine a better method for extracting oil from yellow cheek carp viscera. The re- suits showed that the optimal process parameters of potassium hydroxide hydrolysis method were obtained as follows : ratio of liquid to solid 1.5 : 1, pH 7.5, hydrolysis temperature 70 ~C, hydrolysis time 50 min, po- tassium nitrate dosage 4% and salting time 15 min ,and the extraction rate of yellow cheek carp viscera oil was 87.92% under these conditions;the optimal process parameters of enzymatic hydrolysis method were obtained as follows : ratio of liquid to solid 1.5 : 1, pH 7, enzymolysis temperature 45 ~C, enzyme dosage 2.5% and enzymolysis time 2.5 h, and the extraction rate of yellow cheek carp viscera oil was up to 92.13% under these conditions. The contents of DHA in the oils extracted by potassium hydroxide hydrol- ysis method and enzymatic hydrolysis method were 24.07 mg/g and 36.38 mg/g respectively. The physicochemical properties and DHA content of yellow cheek carp viscera oil extracted by enzymatic hydrolysis method were better than that extracted by potassium hydroxide hydrolysis method, so enzymatic hydrolysis method was a better method for oil extrac- tion from yellow cheek carp viscera.
