本文简要叙述功能性甜味剂──赤藓糖醇的化学与物理性质、营养及功能特性。同时介绍国外用以制造无糖糖果的配方、工艺示例。
This paper mainly introduce chemical and physical character. nutritional and functional properties of erythritol.Prepare sugarless candy by using erythritol was also discussed.
