摘要
本试验旨在研究乳酸链球菌素(Nisin)对肉鸡生长性能、屠宰性能、肉质和营养物质代谢率的影响,为细菌素在肉鸡生产中的应用提供依据。试验采用单因素完全随机试验设计,选用1日龄爱拔益加(AA)肉鸡550只,随机分为5个处理组,每个处理5个重复,每个重复22只鸡。对照组饲喂基础日粮+土霉素6 mg/kg,试验Ⅰ、Ⅱ、Ⅲ、Ⅳ组分别在基础日粮中添加0.025%、0.05%、0.075%和0.1%的Nisin,试验期56 d。结果表明:日粮中添加Nisin显著影响肉鸡平均日增重和饲料增重比,其中0.075%的Nisin较对照组日增重提高17.14%(P<0.05),饲料增重比降低14.66%(P<0.05)。与对照组相比,0.075%的Nisin显著降低了半净膛率(P<0.05)、提高胸肌率(P<0.05);Nisin可显著提高试验鸡胸肌和腿肌pH值(P<0.05),降低胸肌的滴水损失(P<0.05);0.075%的Nisin可显著提高肉鸡的粗蛋白、磷、干物质及能量表观代谢率。建议肉鸡日粮中Nisin添加水平为0.075%。
The object of this experiment was to study effects of different levels bacteriocins (Nisin) in diet on growth performance, carcass traits, meat quality, nutrient metabolic rate of broiler serum. A total of 550 one-day-old Arbor Acres broilers were selected and randomly allocated to five groups randomly, with five replicates in each group. The experiment lasted for 56 days. The control group was basal diet plus 6 mg/kg terramycin, treatment Ⅰ, Ⅱ, Ⅲ, Ⅳ were basal diet added with 0.025%, 0.05%, 0.075% and 0.1% Nisin respectively. The result showed that there were significant effects on the average daily gain and average feed/gain of broiler fed different levels Nisin (P〈0.05), the average daily gain was increased 17.14% (P〈0.05) and the average feed/gain was decreased 14.66% (P〈0.05) in 0.075% group than that of control. Compared to the control, the half-carcass rate was decreased (P〈0.05) and beast muscle rate, nutrient metabolic rate of DM, CP, P and energy were increased significantly (P〈0.05) by fed with 0.075% Nisin ration. Compared to the control, the pH of beast and leg muscles were increased (P〈0.05) and the drop loss was decreased significantly (P〈0.05) in different levels Nisin diets. Obviously, the appropriate supplemented level of Nisin in broilers diets was 0.075%.
