Applications of Nisin in the aspect of cheese

摘要 讨论了 Nisin在干酪的保藏、加工、贮存过程中的变化,并以 Nisin在 Chedder和天然干酪为例探讨了 Nisin的应用的保藏效果。 Changes of Nisin were discussed in detail during preservations,processing and storage of cheese.Chedder and natural cheeses were used as a example so that explain preserving effects of Nisin.The paper is very useful for applications of Nisin in cheese.
