讨论了 Nisin在干酪的保藏、加工、贮存过程中的变化,并以 Nisin在 Chedder和天然干酪为例探讨了 Nisin的应用的保藏效果。
Changes of Nisin were discussed in detail during preservations,processing and storage of cheese.Chedder and natural cheeses were used as a example so that explain preserving effects of Nisin.The paper is very useful for applications of Nisin in cheese.
