摘要
以蒜苔为材料 ,以Cu (CH3 COO) 2 、ZnCl2 为护色剂 ,研究了高温热烫和常温长时浸泡两种方式的护色效果 ,并对护色液的适宜质量浓度 ,最佳处理时间及pH值进行了探讨 .结果表明 :高温热烫护色效果较差 . 3- 45min ,随时间的延长 ,Cu2 + 或Zn2 + 取代叶绿素中Mg2 + 的反应效果不明显 .常温长时护色液浸泡处理效果好 ,绿色长期保持不褪 .最佳处理条件是 :常温条件下 ,用Cu2 + 30 0 μg/ml或Zn2 + 40 0 μg/ml,pH 6 ,经 2 4h浸泡且Zn2 + 40 0 μg/ml为最佳 .
This paper studies the color-keeping effect in the conditions of hot burning and normal atmospheric temperature by adopting garlic boit as material and Cu(CH 3COO) 2 and Zn Cl 2 as color-keeping agent.The proper concentration and time as well as volume of pH color-keeping soluent are explored as well.The results show that we color-keeping effect is poor in hot burning temperature.while it is better in normal atmospheric tecnperature.The optimum conditions: under normal atmospheric temperature, immersed with Cu 2+ 300μg/ml or Zn 2+ 400μg/ml,pH6,24hr.The optimum color-keeping soluent was Zn 2+ 400μg/ml.
