摘要
目的通过调查与取样对嘉兴地区网络订餐食品的安全情况进行分析和评估。方法采取随机问卷调查的形式对市民网络订餐情况进行调查。根据调查结果针对食品安全风险较高的小龙虾和凉菜进行集中抽样检测,重点检测微生物、重金属和寄生虫等指标,幵对检测结果进行分析。结果抽取活小龙虾10批,进行寄生虫和重金属检测。虾鳃、虾黄、虾肉、虾肠均未检出寄生虫,虾鳃、虾黄、虾肉重金属检测结果均合栺,其中1批样品虾黄中镉含量接近国家标准限值。抽取熟小龙虾10批,进行微生物检测,结果均合栺。抽取凉菜60批,进行微生物检测,其中菌落总数超标6批,大肠埃希氏菌超标8批,金黄色葡萄球菌超标1批。结论嘉兴地区网络订餐食品安全性总体可靠。小龙虾存在重金属污染风险,凉菜类食品微生物污染风险较高,应引起监管部门的重视,加强监督执法力度。
Objective To analyze and evaluate the safety situation of online food ordering in Jiaxing city through investigation and sampling.Methods A random questionnaire survey was conducted to investigate the online food ordering of citizens.According to the survey results,the samples of crayfish and cold dishes with high food safety risk were collected,the indicators such as microorganism,heavy metal and parasite were tested,and the test results were analyzed.Results Ten samples of live crayfish were collected and tested for parasites and heavy metals.No parasites were detected in gills,brains,meat and intestines,and the results of heavy metal detection of gills,brain and meat were all qualified,among which the cadmium content in 1 batch of samples was close to the national standard limit.Ten batches of cooked crayfish were collected for microbiological detection,and the results were all qualified.Sixty batches of cold dishes were taken for microbiological testing,the total number of colonies of 6 batches exceeded the standard,Escherichia coli of 8 batches exceeded the standard,and Staphylococcus aureus of 1 batch exceeded the standard.Conclusion The safety of online food ordering in Jiaxing city is overall good. Crayfish is at risk of heavy metal pollution,and the risk of microorganism pollution in cold dishes is high,which is necessary to get the attention of the regulatory authorities and strengthen law enforcement.
