摘要
采用马铃薯蒸汽去皮法并通过正交试验 ,对影响马铃薯蒸汽去皮效果的相关因素进行分析 ,确定了影响因素的主次关系为 :加热时间 >蒸汽温度 >蒸汽压力。最优参数组合为 :蒸汽温度 133℃ ,加热时间 180s,蒸汽压力 0 16MPa。
Peeling is an important link in potato processing.The paper adhibit steam peeling and through an orthogonal test,factors which influence the peeling effect were analyzed ,the order of factors that heat time>steam temperature>steam pressure were proposed and the effective parameters including 133℃ of steam temperature, 180s of heat time and 0 16Mpa of steam pressure were given
