摘要
[目的]提高碎茶末的利用价值,开发碎茶末功能饮料。[方法]以碎绿茶末、茉莉花、牛磺酸、维生素C为主要原料,配以白砂糖、枇杷蜜、柠檬酸钠等,研制出一种抗氧化的功能性饮料。[结果]试验确定了饮料的最佳配方为:以1 L茶饮料计,碎绿茶末11 g,茉莉花5.6 g,牛磺酸100 mg,维生素C 68 mg,白砂糖40 g,枇杷蜜为5 g,柠檬酸钠490 mg。[结论]研究可为废弃碎茶末的资源利用提供新的参考途径。
[Objective] To improve utilization value of tea fragments and develop functional drink.[Method] Using green tea fragments,jasmine,taurine,vitamin C as main raw materials,combined with sugar,honey loquat,sodium citrate,the antioxidant functional beverage was developed.[Result] The beverage is:1 L tea beverage,green tea fragments 11 g,jasmine 5.6 g,taurine 100 mg,vitamin C 68 mg,white sugar 40 g,loquat honey 5 g,sodium citrate 490 mg.[Conclusion] The study can provide a new reference way for utilization of waste tea fragments.
