不同分子量水牛乳酪蛋白酶解肽抗氧化活性的研究 被引量:3

Study of antioxidant activity of buffalo casein peptide fractions with different molecular weight distributions

摘要 通过超滤分离得到不同分子量范围的水牛乳酪蛋白酶解肽组分,对比不同组分的抗氧化活性,结果表明:分子量范围小于1ku的组分,其DPPH自由基、羟基自由基、超氧阴离子清除能力以及还原能力均高于分子量范围在大于1ku(1-3ku)的组分,且二者均显著高于(P〈0.05)酶解前的底物酪蛋白。 The buffalo casein peptide fractions with different molecular weight distributions was isolated by ultraftltration for comparing the antioxidant activity.The results showed that the scavenging capacity of DPPH free radical, hydroxyl free radical, super oxygen anion free radi- cal and the reducing capacity of the fraction 1 ku was higher than fraction 〉 1 ku(1-3 ku) , both fractions were significantly higher (P〈 0.05) than buffalo casein.
