摘要
为研究饲喂粮食和饲料两种猪肉肌内脂肪含量和组成情况,选取样品猪背最长肌为原料,对二者脂肪含量和肌内总脂、甘油三酯、磷脂、游离脂肪的脂肪酸组成进行了测定与分析。结果表明,两种猪肉肌内总脂肪及肌内各脂肪酸含量都有显著差异(P<0.05);二者的肌内总脂肪酸组成无显著差异(P<0.05);而游离脂肪酸、中性脂肪及磷脂的部分有显著差异(P<0.05),但由于这部分所占比例特别小,不足以对各脂肪酸的组成产生显著差异。由于肌内总脂肪由游离脂肪酸、中性脂肪酸及磷脂组成,游离脂肪酸在肌内脂肪中比例比较小,因此两种猪肉间肌内脂肪含量的显著差异主要是由肌内中性脂肪及磷脂含量的显著差异引起的。
The pigs were randomly divided into two groups fed with mixed grain and formulated diet to investigate the intramuscular lipid content and fatty acid composition of the pigs in different feeding modes. The indices included total intramuscular lipids, triglycerides, free fatty acids and phospholipids in longissimus dorsi muscles. The results showed that the total intramuscular lipid content and intramuscular fatty acids content had significant difference between two groups(P 〈0.05).There was no significant differences in composition of intramuscular total lipid(P〈0.05). Some free fatty acids, phospholipids or triglycerides were observed with significant difference(P〈0.05), but the effect of individual fatty acids on each fatty acids composition was very limited due to its low percentage of free fatty acids. The components of the intramuscular lipids were free fatty acids, phospholipids and triglycerides, but the percentage of free fatty acids in intramuscular lipids was very low.The significant differences in intramuscular total lipid content between two groups were mainly caused by the difference of intramuscular triglyceride and phospholipid content.
