摘要
中国特色菜点具有良好的风味与民族文化特征,具有可延展的传统特色,具有良好的口碑与群众基础。采用现代高新技术提升和改造特色菜点加工业,是大势所趋也是最终必然的选择。菜点工业化将推动中国餐饮产业升级转型,准工业化的中央厨房,以及中国特色菜点工业将构成中国食品产业新的增长极。
Chinese special dishes has good flavor and national culture characteristics,with traditional characteristics which can be extent,and has good reputation and the mass base. It is the trends and the in-evitable choice to promote and transform the process of special dishes by using modern technology in the end. The industrialization of dishes will promote the upgrading and transformation of Chinese catering in-dustry which is the central kitchen of quasi-industrialization ,and dishes with Chinese characteristics will constitute a new growth pole of Chinese food industry.
