摘要
主要介绍了国内外有关块根块茎类植物淀粉的提取工艺、理化性质、淀粉糊的功能特性等方面的研究现状,为块根块茎类植物淀粉的进一步研究提供参考,同时为其在食品行业的充分利用提供理论指导。
This paper mainly summarizes researches of state quo on extraction process, physicochemical properties and functional properties of starch pastes of root and tuber plants. This review can provide a reference for further researches on root and tuber plants starches, and theoretically guides the application of root and tuber plants starches in food industry.
