摘要
简要介绍了市售葡萄酒的酿制与保存情况,系统综述了目前葡萄酒生产工艺控制及品质分析方法如国标法,感官分析方法、统计学方法及光谱法和色谱法等研究现状,最后简述了葡萄酒生产工艺控制及品质分析研究存在的问题及发展趋势。
A brief introduction on the brewing and preservation of wine was given in this paper. The research status of wine production control and various analytical methods including the National Standard methods, sensory analysis methods, statistical methods, spectroscopy and chromatography methods were reviewed. Finally the development trend and problem existed in wine production process control and quality analysis was briefly introduced.
