研究了香菇热狗肠的制作工艺和配方,并对操作要点做了简单介绍。制出的香菇热狗肠外观金黄色,切片光滑,口感细腻,富有弹性和脆性,具有浓郁的香菇风味。
The technical processing and formula of lentinus edodes hot dog sausage were studied. And the operating points were simply introduced. The lentinus edodes hot dog sausage with golden yellow surface, smooth slice, delicate taste, high flexibility and brittleness and full lentinus edodes flavor was obtained.
