摘要
以中药黄芪、复原乳、麦芽糖醇和低聚木糖为原料,经均质、灭菌和发酵后,研制获得黄芪酸乳,并对黄芪酸乳游离氨基酸、流变性能、理化指标和降血糖活性进行评价。与对照酸乳相比,黄芪酸乳中苏氨酸、苯丙氨酸和赖氨酸含量均有不同程度增加;黄芪酸乳的储能模量、耗能模量和表观黏度较对照酸乳都有明显提高。在30 d贮藏期内,黄芪酸乳中3种乳酸菌数均有所下降,在第30天时,黄芪酸乳总活菌数为6.38 log cfu/m L。饲喂黄芪酸乳的高血糖模型小鼠的血糖值降低了24.56%,给药黄芪酸乳的小鼠血清胰岛素和总超氧化物歧化酶含量明显上升,同时丙二醛、血清尿素氮、肌酐、甘油三酯、总胆固醇和低密度脂蛋白的含量均有不同程度降低,表明黄芪酸乳具有明显的降血糖活性,并且对高血糖并发症具有显著的延缓作用。
Astragalus membranaceus yogurt was prepared using Chinese traditional medicine Astragalus membranaceus, reconstituted milk, mattitol and xylo-oligosaccharide as raw materials, after homogenizing, sterilization and fermentation. Free amino acids, rheological properties, physicochemical properties and the hypoglycemic activity of Astragalus membranaceus yogurt were evaluated. Compared with control yogurt, the contents of threonine, phenylalanine and lysine in Astragalus membranaceus yogurt increased in different degrees, and the storage modulus, loss modulus and apparent viscosity of Astragalus membranaceus yogurt improved significantly. During the 30 d storage period, three kinds of lactic acid bacteria in Astragalus membranaceus yogurt decreased while the total viable count ofAstragalus membranaceus yogurt was 6.38 log cfu/mL on the 30th day. The blood glucose level of the group which was administrated Astragalus membranaceus yogurt significantly reduced by 24.56%. The serum insulin and total superoxide dismutase contents of mice administrated Astragalus membranaceus yogurt were increased significantly, and meanwhile the contents of the malonaldehyde, serum urea nitrogen, creatinine, triglycerides, total cholesterol and low density lipoprotein were reduced in different degrees, which indicated that Astragalus membranaceus yogurt has obvious hypoglycemic activity and slows down the hyperglycemia complications obviously.
