摘要
研究旨在探讨日粮中添加不同水平黄芪多糖对肉鸡屠宰性能和肌肉品质的影响,为黄芪多糖的临床应用提供试验数据和实践参考。将90只黄羽肉杂鸡随机分成3组(I组、II组、III组),I组饲喂基础日粮,II、III组分别在基础日粮中添加500mg/kg和1 000mg/kg黄芪多糖,试验期42d。结果显示,II组与I组相比,能显著改善半净膛率(P<0.05)、胸肌率(P<0.05)以及红度(a*值)(P<0.05)、黄度(b*值)(P<0.05)、滴水损失(P<0.05)和烹煮损失(P<0.05);III组与I组相比,能显著改善屠宰率(P<0.05)、半净膛率(P<0.05)、胸肌率(P<0.05)、腿肌率(P<0.05)以及红度(a*值)(P<0.05)、黄度(b*值)(P<0.05)、pH值(P<0.05)、滴水损失(P<0.05)、烹煮损失(P<0.05);III组在胸肌率、腿肌率以及烹煮损失方面显著高于II组(P<0.05),在屠宰率、半净膛率、全净膛率以及红度、黄度、亮度、pH、滴水损失方面差异均不显著(P>0.05)。结果表明,基础日粮中添加500mg/kg和1 000mg/kg黄芪多糖均能够提高肉仔鸡的屠宰性能和肌肉品质,且1 000 mg/kg的添加剂量显著优于500mg/kg的添加剂量。
To investigate the effect of different levels of astragalus polysaccharide in diets on the slaughter performance and meat quality of broilersso to provide the reference for the clinical application of astragalus polysaccharide,90 broilers were randomly divided into 3groups(group Ⅰ,Ⅱ,Ⅲ)with group Ⅰ to be the basal diet control group,group Ⅱ and Ⅲ respectively added with 500mg/kg,1 000mg/kg astragalus polysaccharide to the basal diet and fed for 42 days.The results showed,compared with group Ⅰ,diets for group Ⅱ significantly improved the half net carcass rate(P〈0.05),breast muscle rate(P〈0.05),redness(a* value)(P〈0.05),yellowness(b* value)(P〈0.05),drip loss(P〈0.05),and cooking loss(P〈0.05);diets for group Ⅲ significantly improved the slaughter rate(P〈0.05),semi eviscerated rate(P〈0.05),breast muscle rate(P〈0.05),leg muscle rate(P〈0.05),redness(a*value)(P〈0.05),yellowness(b*value)(P〈0.05),pH(P〈0.05),drip loss(P〈0.05)and cooking loss(P〈0.05);group Ⅱ and Ⅲ differed in the breast muscle rate,leg muscle rate,cooking loss(P〈0.05),and the slaughter rate,half-eviscerated yield rate,eviscerated yield rate,redness,yellowness,pH,drip loss displayed nsignificant difference between the two groups(P〈0.05).In general,the addition of 500mg/kg and 1 000mg/kg astragalus polysaccharide in the basal diets significantly promoted slaughter performance and meat quality,and the addition dosage of 1000mg/kg were significantly better than that when adding 500mg/kg.
