摘要
利用电子鼻分析了不同产区、不同采收时间、不同贮藏时间下干/鲜花椒气味的变化,采用多元统计方法对所获得的数据进行了主成分分析(PCA)、判别因子分析(DFA)。结果表明:电子鼻能够判别出不同产区、不同采收时间、不同贮藏时间干/鲜花椒气味的变化,因此,花椒深加工企业可以利用电子鼻把握人工感官难以识别的香气特征相似性较高的原料花椒的整体信息,评价其质量的真实性、优良性和稳定性。
Electronic nose is used to analyze the change of Sichuan pepper flavor with different growing regions, different harvest time, and different storage time. The obtained data are analyzed with principal component analysis (PCA) and discriminant factor analysis (DFA) by multivariate statistical method. The results show that. Sichuan pepper flavor with different growing regions, different harvesttime, and different storage time could be distinguished by electronic nose. Therefore, the pepper flavor characteristics with certain similarity that could not be distinguished by human senses could be distinguished by electronic nose in pepper deep-processing enterprises, to estimate the validity, fineness and constancy of pepper quality.
