食用菌的营养成分和活性研究进展 被引量:24

Development of Effective Component and Activity of Edible Mushroom

摘要 近年来,人们对食用菌保健方面的认识显著提高,它们不仅有较高的营养价值,而且其富含的多糖、多酚、矿质元素和维生素等成分具有抗肿瘤和抗氧化等多种功效。本文概述了食用菌的几种功能成分研究现状,展望了食用菌加工的发展前景,并指出了今后的研究方向,为食用菌保健食品和药品的研发提供参考资料。 Knowledge of health-promoting effects of edible mushrooms has expanded dynamically during the last few years, they not only have higher nutritional value but also have antitumor, antioxidant, and many other effects for their polysaccharides, phenolics, trace element and vitamins. Several functional components of edible mushrooms were reviewed in this paper , the development of edible mushrooms processing is forecasted , and research in the future is analyzed finally , in order to provide a reference to study nutraceuticals and drugs of edible mushrooms.
