摘要
微生物酵素食品是以乳酸菌、酵母菌等益生菌发酵果品、蔬菜而成的一种富含脂肪酶、淀粉酶、蛋白酶和超氧化物歧化酶及乳酸、醋酸和少量乙醇等代谢产物的一种功能性液体或固体食品。文章综述了微生物酵素食品的营养和保健功效、主要含有的微生物和酶以及生产发酵工艺和应用等方面的研究进展,并展望了我国酵素食品应用的广阔前景。
Microbial ferment food was a kind of liquid or solid functional food fermented by probiotics such as lactobacillus and yeasts with fruits and vegetables as the material. It contains the metabolites such as lipase,amylase,protease,superoxide dismutase,lactic acid,acetic acid,and alcohol. Research progress on the nutritional and functional effects of microbial ferment foods,the main microorganism and enzymes contained in these foods,their related fermentation technology and application were summarized in this paper. The application prospect of Chinese ferment food was forecasted.
