摘要
肉类掺假一直备受关注,关乎公共卫生、宗教因素、食品安全、消费者身心健康及不良的肉类市场竞争。应该通过快速、准确的肉类物种鉴别来保护消费者免受这些非法行为侵害。近年来,由于DNA条码技术较高的特异性和敏感性,以及简便性和热稳定性而被提议作为鉴别肉和肉制品物种来源的有利工具。文章简述了DNA条码技术在肉类鉴别中的应用研究进展,并对这种方法的优点进行了讨论。
Meat adulteration has always been a concern for various reasons,such as public health,religious factors,food safety,wholesomeness,and unhealthy competition in meat market. Consumers should be protected from these illegal practices of meat adulterations by quick and precise species authentication of meat. In recent years,DNA barcoding have been proposed as a powerful tool for identifying the species origin in meat and meat products,due to its high specificity and sensitivity,as well as simplicity and heat stability. This paper reviewed the current applications of DNA barcoding in species authentication of meat and the advantages of this method were also discussed.
