不同处理玉米秸秆饲料对延边黄牛屠宰性能及肉品质的影响 被引量:11

摘要 为了研究不同处理的玉米秸秆饲料(膨化、青贮、黄贮玉米秸秆饲料)对延边黄牛屠宰性能及肉品质的影响,采取单因子设计方法,选取18头,体重为(350±15.36)kg、月龄相近、健康无病的延边黄牛,随机分成3组进行饲养试验,组别处理为膨化组(基础精料+膨化玉米秸秆饲料),青贮组(基础精料+常规青贮玉米秸秆饲料),黄贮组(基础精料+常规黄贮玉米秸秆饲料),试验结束后每组选择3头进行屠宰测定。结果表明:青贮组和膨化组的屠宰率显著高于黄贮组(P<0.05);胴体产肉率青贮组高于膨化组,膨化组高于黄贮组,青贮组、膨化组与黄贮组相比差异显著(P<0.05);黄贮组净肉率显著低于其他两组(P<0.05);眼肌面积最高的为膨化组(91.75 cm2),比黄贮组提高了4.87%;滴水损失、蒸煮损失和剪切力等均没有显著的变化,但是青贮组和膨化组的剪切力分别比黄贮组降低了5.26%、4.01%;C141含量三组间差异均显著,青贮组显著高于膨化组(P<0.05),膨化组显著高于黄贮组(P<0.05);青贮组、膨化组C160含量显著高于黄贮组(P<0.05);青贮组、膨化组C161含量显著高于黄贮组(P<0.05);膨化组C182n6c含量显著高于青贮组和黄贮组(P<0.05);膨化组和青贮组的UFA含量显著高于黄贮组(P<0.05)。综上所述,常规青贮和膨化玉米秸秆与常规黄贮玉米秸秆相比可以明显提高肉牛胴体性能和肉品质以及部分脂肪酸含量,玉米秸秆经过青贮和膨化处理后可以作为优质的育肥牛粗饲料,明显优于常规黄贮玉米秸秆饲料。 In order to study the different processing of corn straw feed (puffing, silage, yellow corn stalk silage) influence on Yanbian yellow slaughter performance and meat quality, by single factor de- sign method, selecting 18 head weight (350±15.36) kg months, close, healthy Yanbian cattle, were ran- domly divided into 3 groups by feeding test, group treatment group (basic feed puffed extruded corn straw feed, silage group (basic) concentrate conventional corn straw silage feed), yellow storage group (feed based conventional corn straw yellow storage feed), test after the end of each 3 head slaughter de-termination, the results show that the silage group and expanded group slaughter rate was sig- nificantly higher than that of yellow storage group (P〈O.05); careass meat yield of silage group was higher than that of expanded group, expanded group was higher than that of yellow storage group, silage group, group two (deleted) expansion difference and yellow storage groupsignificantly (P〈0.05); Yellow storage group net meat percentage significantly lower than the other two groups (P〈0.05); Puffing eye muscle area than yellow storage group increased by 4.87%; Drip loss, cooking loss and shear force were no significant changes, but silage and expanded group of shear force than yellow storage group was reduced by 5.26% and 5.26% respectively; C14 : 1 content were signifi- cantly difference between the three groups, silage group is significantly higher than expanded group (P〈 0.05), expanded group is significantly higher than yellow storage group (P〈0.05); Silage group had a significantly higher contents of C16 : 0, puffing yellow storage group (P〈0.05); Silage group had a sig- nificantly higher contents of C16 : 1, puffing yellow storage group (P〈0.05); Puffing group had a signifi- cantly higher content of C18 : 2 n6c silage and yellow storage group (P〈0.05); The UFA content of bulking and silage group is significantly higher than yellow storage group (P〈0.05). Above all, conven- tional silage and puffed corn straw can be (delete) compared with the conventional yellow maize straw storage can obviously increase the beef carcass performance and meat quality and some of the fatty ac- id content, corn straw silage and expanded group after treatment can be used as a high quality of fat- tening cattle roughage, is superior to conventional yellow maize straw feed storage.
