摘要
以无籽刺梨为试验材料,在(2.0±0.5)℃贮藏环境下,采用无包装(CK)、聚乙烯(PE)保鲜袋和打孔PE包装处理,观察无籽刺梨的贮藏效果,并分析其理化性质指标。结果表明,贮藏56 d后,打孔PE组、PE组腐败率分别为67.80%、55.10%,质量损失率分别为14.11%、21.27%;硬度分别为初始值的67.73%、72.58%;可溶性固形物含量分别为初始值的14.70%、13.57%;VC含量分别为初始值的78.32%、72.93%;还原糖含量分别为初始值的14.22%、20.85%。贮藏期间,各包装处理无籽刺梨的总酸含量下降缓慢且差别不大;28 d时,不同包装组到达呼吸高峰,贮藏后期(35 d后)呼吸强度明显增强。综合各指标可知,利用不同包装对无籽刺梨贮藏品质的影响差异显著(P<0.05),并且PE保鲜袋包装效果最佳。
Using Rosa sterilis as raw material, the effect ofunpackaged treatment, polyethylene (PE) film packaging and perforated PE film packaging on the storage ofR. sterilis was studied at (2.0±0.5)℃, and the physicochemical properties were analyzed. After storage for 56 d, the results showed that the decay rate of perforated PE film packaging and PE film packaging were 67.80% and 55.10%, respectively. The mass loss rate were 14.11% and 21.27%, respectively. The hardness of the perforated PE film packaging and PE film packaging group was 67.73% and 72.58% of the original value, the total soluble solids were 14.70% and 13.57%, VC content was 78.32% and 72.93%, and reducing sugar content were 14.22% and 20.85%, respectively. During storage, the total acid content of R. sterilis decreased and the difference was not significant. Different packaging groups reached respiration peak at 28 d, and the respiratory intensity was obviously increased at the later stage of storage (after 35 d). In conclusion, the effect of dif- ferent packaging treatments on the quality ofR. sterilis was significant (P〈0.05), PE film packaging method was better than others.
