液质联用技术在食品真菌毒素检测中的研究进展 被引量:11

摘要 液相色谱-质谱联用技术,具有灵敏度高、选择性好、多种组分同时检测等技术优点,当前广泛应用于食品中真菌毒素检测。本文综述了近年来国内外液相色谱-质谱联用技术在食品真菌毒素检测中主要研究进展,讨论了食品中主要真菌毒素的检测方法,展望了液质联用技术在食品检测中的发展和应用前景,以期为从事食品质量控制和检测分析人员提供参考。 Liquid chromatography tandem mass spectrometry technology has the excellence of high sensitivity, good selectivity and simultaneous determination of compounds.Now it has a wide application in determination of mycotoxins in food. In this paper, recent research progress in determination of food by liquid chromatography tandem mass spectrometry technologies were summarized,and determination technologies of main mycotoxins in food were also analyzed.The development and application prospects of this method were discussed, in order to provide references for the people who work in control of food quality and research on determination of mycotoxins.
