摘要
[目的]探讨高压电场处理对油脂氧化稳定性的影响。[方法]以菜籽油和大豆油为试材,分别用5、10、20、30kV·m^(-1)的高压电场处理1h,以过氧化值及氧化抑制率为评价指标,研究不同场强高压电场处理油脂后抗氧化性的变化。[结果]5、10、20、30kV·m^(-1)高压电场处理均在一定程度上降低了菜籽油和大豆油的过氧化值,延缓了过氧化进程,提高了其氧化稳定性;且有从5kV·m^(-1)到30kV·m^(-1),随着电场强度的增大,高压电场处理的油脂抗氧化性增强,其中,30kV·m^(-1)高压电场处理油脂的抗氧化效果最佳。[结论]高压电场处理可以提高油脂的氧化稳定性,但因油脂的种类、精炼程度的不同而有差异。
[Objective]This article was to study effect of high voltage electric field on the oxidation stability of oils.[Methods]The experiment was carried out with rapeseed oil and soybean oil as materials which were treated one hour with 5、10、20、30kV·m-1 high voltage electric field.Changes of oxidation resistance of oils were studied after treatment with different intensity high voltage electric field.[Results]The peroxide value of oil was reduced in varying degrees when the rapeseed oil and soybean oil were treated with 5、10、20、30kV·m-1 high voltage electric field,and the peroxide process was delayed,the oxidative stability of oils was improved.And from 5kV·m-1 to 30kV·m-1,the greater electric field intensity,the better antioxidant effect of the high voltage electric field within the scope of this study,and compared to other field strength high voltage electric field,the antioxidant effect of 30kV·m-1 high voltage electric field was the best.[Conclusion]The treatment of high voltage electric field can improve the oxidation stability of oil,but this effect is different because of the difference of the type and refining degree of oil.
