摘要
中国白酒历经几千年仍被人们所青睐,这是白酒文化传承和健康价值的体现。白酒的发展方向是健康。本文对白酒中健康成分及其功效进行综述,为"适量饮酒,有益健康"的概念提供科学依据。首次提出健康白酒应该通过"内寻外加,自然强化"来实现,即一方面通过系统分析发现白酒中对人体有益的成分,并通过传统发酵过程的创新增加这些成分的含量;另一方面向白酒中合理添加其它对人体有益的成分。
Chinese Baijiu has been popular for thousands of years, which is the embodiment of the heritage and health value of Chinese Baijiu culture. Health is the development direction and goal of Chinese Baijiu. In this paper, the health ingredients and functional efficacy of Chinese Baijiu were summarized, which explained the old saying ‘moderate drinking benefits human health'. This paper proposed for the first time that the healthy Baijiu should be developed by‘looking from inside and adding from outside, intensifying through natural fermentation process'. More specifically, on the one hand, through the comprehensive analysis of components of Chinese Baijiu to find the healthy and beneficial components in it, and through the technical innovation of the fermentation process to increase the content of these components; on the other hand, by adding other beneficial elements reasonably to make Baijiu more healthier.
