摘要
近年来,随着人们对饮食营养重视程度的不断提高,薏苡仁所延伸的食品、保健品风行国内外。因薏苡仁营养丰富、药食兼用、物美价廉而深受百姓喜爱。通过综述薏苡仁的药用价值、食用价值、营养成分以及产品开发利用的研究进展,为开发具有高附加值的薏苡仁功能食品以及各领域的开发利用提供理论参考和依据。
With the recent emphasis on people's nutrition level continues to improve, the food of Coix seed extending health care products popular domestic and foreign. Because of Coix seed nutritious, medicinal and edible, inexpensive and loved by the people. This article will advances in Coix seed medicinal value, food value, nutrients, and product development and utilization are reviewed, and provide a theoretical basis for the development of reference coix seed functional foods with high added value as well as the development and utilization in various fields.
