可食用膜用于天然物质添加剂固定化的研究进展 被引量:3

摘要 可食用膜是以多糖、蛋白质和脂类等为原料,以包装、涂布和微胶囊等形式,控制食物水分、氧气或各种溶质渗透的薄膜,具有可生物降解、无污染、取材方便以及可食用等优点。其作为一种新型的无污染食品包装材料,亦可作为抗氧化剂、抗菌剂、风味剂和营养强化剂等天然物质添加剂的载体。介绍了几种常见的天然物质添加剂的特性及其可食用膜用于天然物质固定化应用的研究进展,并对可食用膜功能的影响规律进行分析。 Edible film is based on natural edible substances, such as polysaccharides, proteins, lipids and so on, containing packing, coating, microencapsulating to control water and oxygen, or various solute permeability. It has the advantage of biodegradable, non-pollution, easily obtained, edible and so on. It is a new non-polluting food packaging material, also used as the carrier of antioxidant agents, antibacterial agents, flavoring agents, nutritional supplements and other food additives. Describe the features of some common natural substances and its immobilization progress in the edible film, analyze the regular of the edible films' function.
