不同包装材料对杏鲍菇货架期保鲜效果的影响 被引量:9

Influence of Different Packing Materials on Preservation Effects of Pleurotus eryngii during Shelf-life

摘要 以杏鲍菇为试材,分别用0.030 mm PP袋、0.025 mm PE袋、0.07 mm拷贝纸包装,常温下贮藏,探讨不同包装材料对杏鲍菇货架期保鲜效果的影响。结果表明,货架期杏鲍菇采用0.030 mm PP袋或0.025 mm PE袋包装,有效地减少了杏鲍菇子实体水分的散失,抑制了细胞膜渗透率的上升,延缓了粗纤维含量及可滴定酸含量的增加,较好地保持了杏鲍菇的感官品质,有效地延长了杏鲍菇的货架期;相对PP和PE袋包装,拷贝纸包装的杏鲍菇保鲜效果较差。 The experiment was carried out with Pleurotus eryngii as materials which were packed with 0.030 mm PP bag, 0.025 mm PE bag and 0.07 mm copy paper. Not packaging was as a control group. All the Pleurotus eryngii stored at normal temperature. The influence of different packing materials on preservation effects of Pleurotus eryngii were studied during shelf-life. The results showed that Pleurotus eryngii were packed with 0.030 mm PP or 0.025 mm PE bag during shelf-life, the water loss was effectively reduced, the increase of cell membrane permeability was inhibited, the increases of crude fiber content and titration acid content were delayed. And the sensory qualities of Pleurotus eryngii were better maintained, the shelf-life of Pleurotus eryngii was effectively extended. Relative PP and PE bag packaging, the preservation effect ofPleurotus eryngii which packed with 0.07 mm copy paper was poor.
