摘要
醋酸钠在制作人工窖泥中扮演着重要角色,既作为己酸菌发酵过程中的无机盐,又作为窖泥中己酸菌生长的营养物质,还用来调节窖泥的pH值。鉴于醋酸钠在窖泥制作中的作用,本实验采用窖池打孔灌注醋酸钠溶液进行窖池养护的方式,补充窖泥营养物质,调节在池窖泥的pH值,促进窖内以己酸菌为主体的有益微生物的生长繁殖,延缓窖池老化,促进酒质提升。结果表明,实验可使窖泥的pH值提高1.28,己酸菌数量增加3.41×10^5个/g;可使窖池所产优级酒中己酸乙酯含量提高31.06 mg/100 mL,乙酸乙酯含量降低26.90 mg/100 mL。
Sodium acetate plays important roles in the production of artificial pit mud. It is the source of inorganic salts in the fermentation process of caproic acid bacteria, and the nutrients in the growth of caproic acid bacteria in pit mud. It also regulates pH value of pit mud. In this study, the perfusion of sodium acetate solution by pit drilling was performed for pit maintenance, which could supplement pit mud nutrients, regulate the pH value of pit mud, promote the growth and reproduction of beneficial microbes especially caproic acid bacteria in pits, delay pit mud aging, and improve liquor quality. The experimental results suggested that, pH value of pit mud increased by 1.28, the number of caproic acid bacteria increased to 3.41 ×10^5 granule/g, the content of ethyl caproate in the produced liquor increased by 31.06 mg/100 mL, and the content of ethyl acetate in the produced liquor reduced by 26.9 mg/100 mL.
