摘要
为研究和比较两种婺源名优绿茶天香云翠和婺源仙枝香气成分,采用固相微萃取方法对其挥发性成分进行提取,并使用GC-QQQ-MS技术对实验数据进行鉴定分析,用峰面积归一化法测定各成分的相对质量分数。结果表明:天香云翠分离鉴定出挥发性成分共48种,醇类最多,其次为烯烃类和烷烃类,婺源仙枝分离鉴定出挥发性成分共49种,烯烃类最多,其次为醇类和醛类。二者组成相似,各组分含量不同。其中芳樟醇、香叶醇含量均很高。推测其差异可能与品种及工艺等因素相关。
To research and compare the aroma components in two famous Wuyuan green teas,Tianxiangun-cui and Wuyuanxianzhi,this article used SPME and GC-QQQ-MS to extract the volatile compounds,and u-tilized the method of peak area normalization to determine their relative contents.The results showed that a total of 48 major volatile compounds were identified in Tianxiangyuncui,with alcohols and olefines being the principal and second principal components respectively.Furthermore,a total of 49 major volatile com-pounds were identified in Wuyuanxianzhi,with olefins being the dominate component and alcohols and al-dehydes being the second dominate components.They are similar in composition,but different in compo-nent content.The components of Linalool and geraniol are very high in both teas.The difference may be due to the tea varieties and its processing.
