摘要
简要综述食用菌产业发展现状,在查阅、收集食用菌物理贮藏保鲜技术相关文献的基础上,总结冷藏保鲜、速冻保鲜、气调保鲜、臭氧保鲜这4种主要保鲜方法的机理、特点、保鲜效果及操作方法,为延长食用菌的保质期提供参考和借鉴。
This paper briefly summarized the development status of edible mushroom industry, on the basis of looking up and collecting pertinent literature of technology of physical preservation and freshness for edible mushrooms, summarized the mechanism, characteristics, preservation effect and operation methods of these four main preservation methods: cold storage, quick-freezing, controlled atmosphere and ozone preservation. It provided reference for extending the shelf life of edible mushrooms.
