摘要
从高温大曲和红星二锅头酒醅中分离筛选到四株蛋白酶活性较高的菌株,应用于红星二锅头酒生产中后,试验酒中四甲基吡嗪含量达到10mg/L以上。
Four strains with high protease activity were screened from high temperature daqu and fermented grains of red star erguotou Baijiu,,and applicated in erguotou Baijiu,,the concentration of Tetramethyl pyrazine in test wine was above 10mg/L.
