摘要
通过测定不同月龄陕北白绒山羊羯羊屠宰性能及器官发育各项指标,为评价陕北白绒山羊产肉性能及明确其适宜屠宰月龄提供理论依据。选择农户饲养条件下不同月龄（分别为6、8、10和12月龄）陕北白绒山羊羯羊进行屠宰性能及器官发育的研究。结果表明：①试验羊10月龄的屠宰率和净肉率最高。除屠宰率、净肉率和内脂率外,其他指标均随月龄的增加而增加。②试验羊10月龄和12月龄瘤胃重均显著大于6月龄和8月龄（P〈0.05）,其他胃室重和肠重在各个月龄之间差异均不显著（P〉0.05）。各胃室及大小肠占宰前活重的比例均在6月龄最高。从各胃室占复胃重的比例看,瘤胃比例最大,其次是皱胃,瓣胃比例最小,但在各月龄之间差异均不显著（P〉0.05）。③试验羊内脏器官重量均随月龄的增加而增加,且在不同月龄间差异极显著或显著（P〈0.01,P〈0.05）。10月龄和12月龄肾脏占宰前活重比例显著小于6月龄（P〈0.05）,其他指标在各个月龄之间差异均不显著（P〉0.05）。说明陕北白绒山羊羯羊在10～12月龄的生长发育速度较快且产肉性能较好,因此,在农户饲养条件下陕北白绒山羊羯羊在10月龄即可出栏屠宰。
This experiment was conducted to study the slaughter performance and organ development of Shanbei white cashmere goats at different ages for evaluating meat productivity and the optimal slaughter age. The wethers at 6,8,10 and 12- month- old under farmer feeding condition were used for the slaughter test. The results showed that：① the dressing percentage and meat percentage of the 10- month- old wether was the highest. Some indexes increased with the month age except dressing percentage,meat percentage and visceral fat percentage. ②The rumen weights of the wether at 10 and 12- month- old were significantly higher than those at 6 and 8- month- old（P〈0.05）,while not in other gastrointestinal tract weight（P〉0.05）.The gastrointestinal tract weight in alive weight of the wether at 6- month- old was the highest. The rumen weight in complex stomach weight was the highest,next was abomasum,omasum percentage was the smallest,while there was no significant difference in different ages（P〉0.05）. ③The internal organ weight increased with the month age,and there were significant differences in different ages（P〈0.01;P〈0.05）. The kidney weights at 10 and 12- month- old were significantly smaller than that at 6- month- old（P〈0.05）,while not in other indexes（P〈0.05）.Therefore,it was concluded that the suitable slaughter age for the goat would be at 10- 12 month.
