摘要
叙述了可食性膜的材料的最新研究进展,以及多糖、蛋白质基可食性膜国内外的研究成果;从膜材料的化学结构、来源、优势及局限性等基础理论方面探讨各种膜材的特性,介绍了可食性膜的制备方式及加工工艺对膜性能的影响;对可食性膜存在的问题提出了有益的见解。
The latest research progress of edible coatings material was discussed,especially focusing on research results of polysaccharide and protein films around the world.The characteristics of film materials were discussed based on the aspects of chemical structures,sources,advantages and disadvantages.Moreover,effect of preparation methods and processing technology on the film property was introduced.Finally,the suggestion involving present problems of e edible film were put forwarded.
