摘要
作为一种新型食用油,米糠油营养价值高、口感好,受到消费者的青睐。介绍了米糠油的组成和功能性成分,综述了米糠油的物理压榨法、化学溶剂浸出法、超临界流体萃取法和水酶法等提取方法以及脱胶、脱酸和脱色关键精炼方法,归纳了目前植物油掺伪鉴别的主要技术和米糠油掺伪鉴别的研究现状,旨在为米糠油的提取、精炼工艺和掺伪鉴别提供参考。
As a new type of edible oil, rice bran oil is high in nutritional value and has a good taste, and it becomes popular among the customers. The composition and functional components of rice bran oil were introduced. The extraction methods such as mechanical pressing method and chemical solvent extraction method, supercritical fluid extraction method and aqueous enzymatic extraction method and the key refi- ning technologies such as degumming, deacidification and bleaching were summarized. The main discern- ing technology of vegetable oil and the research status of discerning technology of rice bran oil were induced, so as to provide reference for the extraction, refining and discerning of rice bran oil.
