摘要
食用菌发酵饮料是一种新型的保健饮料,食用菌在基质中发酵可以增加许多代谢活性物质,具有较高的营养价值和独特的保健功能。对食用菌发酵茶饮料、食用菌发酵醋饮料,以及食用菌发酵生产其他具有保健功能的饮料研究进行总结,并对食用菌发酵饮料未来的发展方向进行了展望。
Fermented beverage of edible fungi is a new health beverage. The fermentation of edible fungi in the substrate can increase many metabolic active substances which have high nutritional value and powerful health care function. Edible fungus fermented tea beverage,vinegar beverage and other beverages with health care function are summarized in this paper, and future development direction of fermented beverage of edible fungi is expected.
