摘要
随着中国社会经济的高速发展,城市化进程加快,有关膳食营养引起的慢性疾病正逐步侵害中国居民健康,居民饮食不均衡现象严重。在人体摄入的七大营养素中,蛋白质是机体所有重要结构的组成部分,贯穿生命的整个过程,摄入不足或过量都会危害人体健康。着重分析了1983—2014年中国城镇居民和农村居民膳食中获得的蛋白质含量,并就摄入的动物性蛋白和植物性蛋白进行分析,从而为正确引导居民合理健康饮食提供依据。
With the rapid development of China's economy, the process of urbanization is accelerating. The chronic diseases caused by dietary nutrition are gradually damaging China's residents' health, and the inhabitants' dietary has become more and more imbalanced. In the seven types of nutrients, protein is the most important component for each organ, running through the entire process of life. Both inadequate and excessive intake will endanger our health. In this paper, the authors calculated the protein intake for urban and rural residents from 1983 to 2014, and analyzed the intake of animal protein and plant protein, so as to provide the standard intake basis of protein for correctly guiding the residents' healthy diet.
