脂肪作为肉类中一种重要营养成分,不仅对肉类的营养价值有重要影响,而且脂肪还可以通过其自身含有的各种脂肪酸性质而对肉品质产生重要影响。本文主要介绍脂肪对肉品质中肉风味、口感、嫩度等方面影响,并探讨如何通过改变脂肪来提高肉品质。
As an important nutrient in meat, fat is not only has an important effect on the nutritional value of meat, but also has an important effect on meat quality through the various fatty acids it contains.
