摘要
研究了贵长猕猴桃果皮中多酚的提取工艺及抗氧化能力。通过正交试验优化贵长猕猴桃果皮多酚提取工艺参数,以福林酚法测定多酚的含量;以对DPPH自由基和超氧自由基的清除率为指标,评价贵长猕猴桃果皮多酚的自由基清除能力。研究表明:贵长猕猴桃果皮多酚的提取选用乙醇提取为佳,其提取工艺参数为:提取温度50℃、提取时间60 min、料液比1:20、乙醇体积分数60%,多酚的提取含量为13.04 mg/g。贵长猕猴桃果皮多酚对DPPH自由基及超氧阴离子自由基都具有一定的清除能力。
This paper chose Guichang kiwifruit pericarp to be the study object. The polyphenol extraction process in peel and the antioxidant ability has been discussed. The polyphenol extraction parameter has been optimized based on orthogonal test. Polyphenol content was measured by Folin-reagent method. Using the elimination of DPPH free radical and the superoxide radical to evaluate the elimination of free radical of polyphenol from Guichang kiwifruit pericarp. The research indicated that ethyl alcohol is a suitable method for polyphenol extraction of Guichang kiwifruit pericarp. The extraction parameters has been tested as below. Extraction temperature is 50 ℃, extraction time is 60 min, solid-liquid ratio is 1:20, ethyl alcohol volume fraction is 60%, the extraction content of polyphenol is 13.04 mg/g. The pericarp polyphenol of Guichang kiwifruit has the elimination ability for DPPH free radical and superoxide radical.
