玉米浆成分分析及其抗氧化活性研究 被引量:8

摘要 试验测定分析了玉米浆的组成成分,并对其抗氧化活性进行了评价。结果表明,玉米浆中固形物含量为38.4%,其中大部分为蛋白质,占干物质的62.58%;所含蛋白分子量较小,集中在14.4 kDa以下,氨基酸种类齐全,是一种优质植物蛋白。抗氧化活性评价发现玉米浆对DPPH自由基和ABTS自由基均具有较强的清除作用,同时具有很强的氧自由基吸收能力。 In this study, the composition of corn steep liquor was determined, and its antioxidant activity was evaluated. The results showed that the content of soluble solid was 38.4%, and most of which was proteins, which accounted for 62.58% of dry matter. The protein molecular weight was low, concentrated below 14.4 kDa, and amino acids were all kinds, so it was a high quality plant protein. Corn steep liquor had strong scavenging effect on DPPH frec radical and ABTS free radical, and had strong oxygen free radical absorbability at the same time.
