摘要
罗非鱼营养丰富,物美价廉,养殖范围较广,具有极高的经济价值。国内外学者针对罗非鱼各个部位的营养成分进行分析并加以利用,研制出许多产品,极大地提高了罗非鱼的经济价值。罗非鱼除生食外,各个部位的开发利用主要集中在鱼油和胶原蛋白:鱼油是广为人知的功能性油脂,具有较高的生物活性;胶原蛋白具有低免疫性、强生物相容性和高生物降解性,具有广阔的开发前景。因此,研究综述了罗非鱼各个部位的营养价值及其开发利用现状,并针对研究较多的鱼油和胶原蛋白,阐明其提取原理,分析各个提取方法的利弊,旨在为提高罗非鱼经济价值提供参考。
The tilapia is rich in nutrition, good in price and low in price. It has a wide range of aquaculture, and has high economic value. Based on the analysis and utilization of the nutritional components of tilapia, a lot of products have been developed at home and abroad, which has greatly improved the economic value of tilapia. In addition to fresh tilapia, the development and utilization of various parts mainly concentrated in the fish oil and collagen. Fish oil is known as functional oil, and has high biological activity. Collagen has high biocompatibility and biodegradability, low immunogenicity and strong biological, and it has broad development prospect. Therefore, summarize the nutritional value and development status of tilapia, elucidate its extraction principle and analyze the advantages and disadvantages of various extraction methods, aiming at providing reference for improving the economic value of tilapia.
