摘要
低聚异麦芽糖是一种新型的功能性低聚糖,由于它具有良好的理化特性和生理功能,近些年其生产发展很快,国内外市场潜力巨大。目前,低聚异麦芽糖主要以淀粉或含淀粉的各类粮食为原料,经多酶协同作用加工而成。本文对低聚异麦芽糖的命名、生产用酶制剂、生产工艺、产品特性及应用等进行了综述。
Isomaltooligosaccharide is a group of new functional oligosaccharides.lt has rapid production development and enormous market potential home and abroad in recent years due to good physical and chemical characteristics and physiological functions. At present, with starch or all kinds of grain that containing starch, isomal-tooligosaccharides are synthesized by many enzymes. In this paper the name, enzymes used, production technology , characteristics and application of isomaltooligosaccharides are summarized.
