摘要
花青素作为天然抗氧化剂,对其研究越来越受到重视。过去已经从多种植物中对花青素进行了提取并进行了开发,本文参考了国内外关于花青素的研究,综述了植物(及甜菜)花青素的研究现状、特性、生物活性及药用保健作用研究,旨在为甜菜花青素的资源和开发利用提供一定参考。
The research of anthocyanin as natural antioxidant was receiving more and more attention.Anthocyanins had been extracted and developed in many kinds of plants.The paper summarized the research of anthocyanin including the research situation,characteristics,biological activity,and medical and health-care effect of plant(and beet)anthocyanin.The aim was to provide some references for the resources and exploitation of beet anthocyanin.
