负载量对赤霞珠葡萄酒挥发性物质的影响 被引量:7

摘要 以酿酒葡萄赤霞珠为试材,采用顶空固相微萃取(HS-SPME)结合气相色谱-质谱联用技术(GC-MS),以不疏果作对照,分析研究了花后疏果降低负载量对赤霞珠葡萄酒理化指标及挥发性物质的影响。结果表明:从赤霞珠葡萄酒中共鉴定出111种挥发性物质,包括酯类物质46种、醇类物质13种、酸类物质9种、烃类物质25种、醛酮类物质9种和其他类物质9种,其中酯类物质为赤霞珠葡萄酒的主要香气物质,占总组分的90%以上;不同疏果处理下,葡萄酒中挥发性物质的种类和含量均高于对照,相对含量在106 252.7~134 655.3μg/L之间,说明疏果调控负载量有利于葡萄酒挥发性物质的积累。
