摘要
水产品质量安全关乎国民健康,是食品安全的重要组成部分。随着高密度养殖渔业的发展和水产品的社会需求量越来越大,在运输环节人为添加丁香酚用于降低水产动物代谢水平、减轻应激反应,可减少运输过程中水产动物死亡率。丁香酚加入到运输水体导致在水产动物体内积蓄,摄入含丁香酚的水产品对人体健康形成潜在风险。目前中国没有丁香酚作为麻醉剂的检测标准及残留限量值,也无推荐休药期,检测机构都是依据文献等非标方法进行检测。文章对国内外丁香酚在水生动物、水产运输暂养水体及其他基质中的残留检测现状与研究进展进行综述,针对样品基质、检测设备、方法学参数等进行了统计和比较,评价了各方法的优缺点,展示了经典示例并介绍了内标物质,提出利用串联四级杆技术配合内标法与合适的前处理技术检测水体基质中丁香酚残留是最可靠有效的方法,通过横向比较和制约关系的阐述以期为水产运输暂养水体中丁香酚残留检测方法的选择提供参考。
Aquatic product quality and safety are an important part of food safety,which is closely related to the health of citizens.Following the development of high-density aquaculture fishery,eugenol is popular for farming and transportation.Artificial addition of eugenol could significantly reduce stress and metabolic rate,which became a mainstream of modern fisheries.Eugenol in transport water could accumulate in fish body,which may pose the potential risk to human health.At present,there is no domestic national standard for eugenol residue analysis,and also no maximum residue limit,nor recommended withdrawal period.So the detection agencies carry out inspection based on literatures.In this paper,the present situation and research progress of eugenol residue analysis in aquatic products,their corresponding transport and temporary water and other matrix were reviewed.Summary and comparisons of sample matrices,testing equipment,methodological parameterswere performed.The advantages and disadvantages of each method were also evaluated.Examples of classical methods were presented and internal standards were recommended.The conclusion is that it is the most reliable and effective method to detect eugenol residues in water matrix by using the tandem quadrupole equipment with the internal standard method and suitable pretreatment techniques.Moreover,the comparison and restriction information of each method were considered to be a scientific basis for the residue detection method selection.[Chinese Fishery Quality and Standards,2018,8(2):57-65]
