摘要
研究不同萃取头对梨果实香气种类的影响,旨为梨果实香气的提取选择提供科学依据。采用顶空固相微萃取(headspace solid phace microextraction,HS-SPME),结合气相色谱质谱联用(GC-MS)技术,选用7种萃取头对黄冠梨成熟果实的香气成分进行萃取,分析了不同萃取头萃取的果实香气物质种类及其相对含量的差异。检测结果表明:7种萃取头共萃取到香气成分8类34种,其中,醛类物质7种,醇类物质6种,酯类物质14种,烃类物质1种,酮类物质1种,苯类物质3种,醚类物质1种,酸类物质1种。进一步对各萃取头萃取到的香气物质进行分析发现,PDMS/DVB (粉色平头,涂层厚度65μm)萃取头和DVB/CAR/PDMS (涂层厚度50/30μm)萃取头萃取到的香气物质种类最多,均达到了21种,且均以醛类物质中的己醛和2-己烯醛相对含量较高;其他5种萃取头萃取到的香气种类和相对含量均较少。不同萃取头对果实挥发性物质的吸收具有选择性,在黄冠梨果实香气萃取时可选择PDMS/DVB (粉色平头,涂层厚度65μm)萃取头和DVB/CAR/PDMS (涂层厚度50/30μm)萃取头。
Using HS-SPME and GC-MS technology,the aroma components of Huangguan pear fruits were extracted by seven extraction fibers,and the difference of aroma components and relative content were analyzed.The results showed that thirty-four aroma components from eight categories were extracted by seven different extraction fibers,including seven kinds of aldehydes,six kinds of alcohols,fourteen kinds of esters,one kind of alkanes,one kind of ketones,one kind of acid,three kind of benzenes,and one kind of ether.The aroma componts extracted by different extraction fibers were analyzed.Both the extraction fibers of PDMS/DVB(pink/plain/65 μm)and DVB/CAR/PDMS(50/30 μm)extracted twenty-one aroma components,and the relative contents of hexanal and 2-hexenal in aldehydes were the highests,while the other five extraction fibers extracted less aroma species and relative contents.According to the selectivity of different extraction fibers for the absorption of volatile substances in fruits,PDMS/DVB(pink/plain/65 μm)and DVB/CAR/PDMS(50/30 μm)could be used in the extraction of aroma components of Huangguan pear fruits in the future.
