摘要
介绍了紫外杀菌技术在乳制品灭菌工艺中的研究情况,包括对乳制品中特定微生物的杀灭效果、对乳制品中蛋白质、脂肪及维生素的影响,同时列举了应用于乳制品杀菌的紫外设备情况,为紫外杀菌技术应用于乳制品杀菌领域提供一些参考。
This paper mainly introduces the research of UV sterilization technology in dairy produucts sterilization,including the killing effect of specific microbes in dairy productions,the effect on protein,fat and vitamins in dairy products.At same time enumerates the UV equipment used in dairy products sterilization.It will provide some reference for the application of UV sterilizaton technology in dairy products.
