摘要
监测了甘蔗红糖生产过程的品质变化。实验结果表明:从泥汁箱到清汁箱,糖汁pH下降明显而且清汁pH变化幅度小,红糖清汁的简纯度与混合汁相比呈显著提高,糖浆和洗甄水中含有丰富的还原糖和多酚类物质。成品红糖具有一定的抗氧化能力,粒度的适当控制可以有效缓解红糖储存吸潮,样品经检测均符合国家食品卫生标准。
The quality change of cane brown sugar in production process was monitored.The results showed that the pH of clear solution decreased obviously from the mixed solution box to the clear solution box,and the amplitude of pH variation was small in clear solution.The manufactured product of brown sugar had certain antioxidant ability.The appropriate control of particle size could effectively alleviate the moisture absorption of brown sugar in storage.The samples were tested to meet national food hygiene standards.
