摘要
荧光纳米颗粒是一种新型的纳米粒子。因其独特的光学性质,越来越多荧光纳米颗粒被设计用于食品添加剂或食品包装中。然而,大多数荧光纳米颗粒都含有高毒性元素,其在食品工业中使用的一个主要阻碍是其潜在的毒性。文章就目前对荧光纳米粒子毒性的相关研究简综述了荧光纳米颗粒在体内和体外潜在的毒性作用、毒性影响因素、常见的毒性评价方法以及荧光纳米颗粒与食品成分之间的相互作用,旨在为荧光纳米粒子在食品中的应用提供方向和安全性评价依据。
Fluorescent nanoparticles (FNPs ) is a new kind of nanoparticles (NP ).Due to its unique optical properties,more and more FNPs are designed for food additives or food packaging in food science.However,despite the fluorescent nanoparticles has many advantages,most of the fluorescent nanoparticles contain toxic elements.One of the main obstacles to the use of fluorescent nanoparticles in the food industry is their potential toxicity.The mechanism of potential toxicity was mainly summarized,influencing factors,related toxicity evaluation method and the interaction between fluorescent nanoparticles and food ingredients.It provided direction and safety evaluation basis for the application of fluorescent nanoparticles in food.
