摘要
以乌海产区"美乐"葡萄为试材,于葡萄转色后每隔4~7 d取样一次,分析葡萄的基本理化指标和主要多酚含量,并对不同采收期葡萄酿造的葡萄酒的感官指标做定量描述分析(QDA),同时,对不同成熟时期葡萄的主要指标进行相关性分析和主成分分析(PCA),以期筛选出对葡萄和葡萄酒品质影响最大的指标,建立乌海产区"美乐"葡萄成熟度控制指标体系,为该产区葡萄适时采收提供试验基础。结果表明:随着葡萄的成熟,还原糖含量、糖酸比不断升高,总酸含量逐渐降低;果皮和籽中多酚含量基本呈现先降低后增高的趋势;QDA分析结果表明,随着采收期的推迟,葡萄酒的感官品质更高;PCA分析结果表明,乌海产区"美乐"葡萄成熟度控制的一级指标为果皮总酚,二级指标为籽黄酮,三级指标为果皮单宁,其含量分别达到16.83~20.89、68.28~71.88、0.69~0.94 mg·g-1时,葡萄成熟度最佳。
The ’Merlot’ grapes from Wuhai region were set as test materials to analyze the maturity control indices.The grape samples were collected once every 4 to 7 days after veraison to analyze the basic physicochemical indices and the main polyphenols contents.In addition,quantitative descriptive analysis(QDA) was performed on the sensory indices of the wines produced from the grapes collected at different harvest dates.At the same time,correlation analysis and principal components analysis(PCA) were carried out on the main indices of the grapes collected at different harvest dates,in order to screen out the indices which had the greatest influence on grape and wine quality,and establish the ’Merlot’ grapes maturity control indices system in Wuhai region,so as to provide an experimental basis for timely grape harvest in this area.The results showed that the reducing sugar contents and the sugar-acid ratios increased and the total acid contents gradually decreased with the ripening of the grapes.The polyphenol contents of both the skins and seeds showed an upward trend after the initial decrease.The results of QDA indicated that the sensory quality of the wines increased with a prolonged harvest date.The results of PCA showed that the primary indicator of ’Merlot’ grapes maturity control in Wuhai region was total phenols of the skins,the secondary indicator was flavonoids of the seeds,and the third one was tannins of the skins.When their contents reached 16.83-20.89 mg·g-1,68.28-71.88 mg·g-1,and 0.69-0.94 mg·g-1 respectively,the maturity of the grapes was the best.
